Vegas is the capital of shows

Vegas is the capital of Restaurants
Each hotel you may choose to stay at has a theme, so pick one with entertainment you like.
Walking along the strip with lights, fountains, etc, is also good
A tour bus trip to the Hoover Dam (9th wonder of the world) to fill in a day others may use for hitting the casinos
And use the casino as entertainment - when it stops being fun, walk away from the table / machine.

Check out my tour of the Las Vegas strip (link below). I’ve visited the Las Vegas strip 18 times since 1992 and sure there is a lot to do and it is a fun experience overall but the drawbacks are the huge crowds and the Disneyland touristy atmosphere. As an example, riding the elevator 109 stories up to the top of the Stratosphere and walking around the observation deck is an exhilarating experience… while waiting on line for an hour and having to go through an airport style metal detector before getting to the elevator detracts from the fun.
Being with someone under 21 you’ll have to avoid the casinos so I suggest walking through Mandalay Place (which connects Luxor to Mandalay Bay) and visiting Fashion Show Mall (next to Treasure Island, to the north) and Caesars Forum Shops at Caesars Palace; the Stratosphere observation deck; Planet Hollywood’s "Miracle Mile" shops; the Venetian shops… and try to be at Venetian at sunset, where you can get a good view of the Mirage volcano during its first eruption of the evening. The second level of the Venetian shops has an outdoor walkway overlooking the canal, which is a good spot for watching the sunset.
