Tips for new vegetarian entertaining non-vege-eating houseguest?

I am a new vegetarian. By new I mean, I have only been vegetarian for 2 months.

I have a cousin who is coming over for a visit. She will be staying with me for 10 days. Thing is, she absolutely refuses to eat any vegetables, she have always been like this since we were kids so it is nothing new.

The thing is I do not know what to cook/serve/make so that we both would enjoy it. The vegetables that she does eat are cucumbers, potatoes and mushroom. That’s it. I really at my wit’s end. I’m still figuring out this vegetarian thing and she’s making it very complicated.

Any help/tips/suggestions from veteran vegetarians?
Added details:

We’re both are students. I am currently studying abroad in Australia so she is here for a visit seeing that she never been to Australia. So eating out or ordering pizza everyday is not really an option cause you know….

Students = dirt-broke-most-of-the-time

If you are being nice enough to take her in then she can eat what you offer or she can go pick up what she wants to eat on her own. It’s your home, don’t feel obliged to change the way you do things for anyone else.

That said, if you do decide to cook almost anyone will eat pasta with red sauce. Cook veggies in a second pan to add to yours and let her have it the boring way. It’s cheap, easy, and feeds both of you.

    Buy her some cereal, sandwich meat, and frozen dinners. Don’t cook every meal for her, let her do some of the cooking and/or cleaning up. Try making tacos (with beans for you and meat for her), enchiladas, macaroni and cheese, spaghetti with marinara or alfredo sauce, cheese ravioli, or cheese manicotti. You could always use meat substitute as a replacement for taco meat or sloppy joe meat.

    I think pasta is a great choice, how about bean burritos? Cheese pizza, hummus and pita bread, omelettes, risotto, quiche etc. One dish meals are easy and most people like them.

    You could ask her if she would like you to pick her up anything special while she is there, since you are now on a vegetarian diet. Someone mentioned luncheon meat. I think that is a good idea.

    You could get vegetarian chicken patties or veggie burgers. They taste very close to the real meat. Maybe she would eat that?

    normally id say let the visitor fend for themself if they don’t like what you have but since they are going to be a pre-aranged houseguest its a little different and hospitality demands you accommodate them in this situation.

    order in (each person gets what they want!)
    this is kind of a no brainer but i think it can work for 10 days.

    Would she object to mac n cheese? What about cheese lasagna? Does she like Indian or Chinese? Mexican? Bean burritos are a good choice. Try Quorn "meatballs" with spaghetti. You could also go out to eat at some point.

    Remember also that you two don’t HAVE to eat the same thing.

    Hmm, you could always try pasta dishes. For example, when I went over a friend’s house back when I was still ovo-lacto, we mostly just ate Tuna Helper without the tuna and mac & cheese.
    If you don’t oppose to having any meat at all in the house, then you can also do like someone else suggested and stock up on frozen dinners/instant stuff.
